Apple Persimmon Pies

Oh my god. These Apple Persimmon Pies are fantastic. I’m a huge fan of persimmons and I’ve been trying to use them in any way possible!


Apple juice pie dough
2 1/4 cups (280 grams) of all-purpose flour
1 tsp of baking powder
1/2 tsp of salt
1 stick (113 grams) of very very cold unsalted butter, cubed
10 tbsp of very cold/iced apple juice

Apple and persimmon filling
1 large or 1 1/2 small Fuji apple (or Granny Smith), flesh weights 175 grams/6.2 oz
2 tbsp of unsalted butter
1/4 cup + 1 tbsp of sugar
1 tsp of lemon juice
1/4 tsp of ground cinnamon
1/4 tsp of ground allspice
1/8 tsp of grated nutmeg
2 ~ 3 ripen persimmons, flesh weights 185 grams/6.5 oz
1 tbsp of cornstarch
1/4 tsp of vanilla extract

Cinnamon and cardamon sugar
1/3 cup of sugar
1/2 tsp of ground cinnamon
1/2 tsp of ground cardamon
